Chef Siska’s Mint Chocolate Chip dessert

Dang! Today felt like we were in the middle of July! I can already feel the excitement for this summer build up! Specially here in San Diego with all the amazing beaches, hiking trails, and bars, and restaurants.

The tough part of it is maintaining (or obtaining) a flat stomach, during these days. I’m gonna give you a little help by giving you this recipe by Chef Siska. She’s this brilliant food enthusiast from Denmark that figured out a way to give us a gluten free, dairy free and incredibly delicious Mint Chocolate Dessert.

Ingredients:

1 big ripe avocado 1 cup full-fat coconut milk, frozen or ice cold 6 dates 1 teaspoon vanilla powder ½ cup fresh mint leaves 50g dark 85 % chocolate, chopped into small pieces Instructions

Chop the chocolate and put aside. Place the rest of the ingredients in a blender or food processor and mix until smooth. Place the mixture in a bowl, add the chocolate pieces and mix with a spoon. Serve immediately and enjoy! Serves 2
