Paleo Banana Coconut Ice Cream

Well well well!

Three of my favorite things in the planet put into one:

1.Bananas

2. Coconut

3. Ice-cream!


I would recommend eating this post-workout with a protein shake, or  during a high carb day. The bananas contain high amounts of sugar, so be mindful!! Here’s the recipe

Ingredients

4 ripe bananas 1 cup Coconut Cream 2 tsp Vanilla extract or 2 Vanilla Beans 1 T honey (optional)

Directions:

  1. Peel the bananas and mash them in a bowl with a masher until there are no big chunks

  2.  Add the vanilla extract (or scrape the insides of the vanilla beans)

  3. Stir in coconut cream

  4. If you would like the ice cream smooth, put it in the blender

  5. Pour in a bowl, cover it, and place it in the freezer

  6. As soon as this firms up (1-2 hours), this ice cream is ready to devour!

Tip: Stir in chocolate chips!
